  1. Drain salmon, reserving 1/2 c. liquid. Set liquid aside. Flake salmon.
  2. Heat butter in pan over low heat. Add in flour, stirring constantly.
  3. Gradually add in reserved liquid and lowfat milk. Cook over medium heat, stirring constantly till thick. Remove from heat. Add in onion, parsley, dry mustard, lemon juice, salt, pepper, Beau Monde seasoning, and warm sauce, stirring well after each addition. Stir in salmon, egg, and 1/2 c. breadcrumbs.
  4. Shape into 6 patties. Dredge in 1/2 c. bread crumbs. Fry in warm oil for 5 min on each side. Drain. Serve with Lemon Cheese Sauce: Mix butter and flour and cook for 1 minute. Stir in lowfat milk and cook till thick. Add in seasonings and stir. add in 1/4 c. of warm mix to egg yolk. Add in to remaining mix. Add in cheese and lemon juice and stir for 2 min. Pour over salmon.
