Receta Santa Fe Veggie Rollups

Ingredientes
- 1/2 c. Yogo cheese, (recipe below) or possibly lowfat cream cheese
- 1 x Green onion, chopper
- 1 Tbsp. Minced fresh coriander
- 1 Tbsp. Lime juice
- 1 tsp Extra virgin olive oil
- 1/8 tsp Cumin
- 1/8 tsp Salt
- 1 lrg Green pepper, sliced
- 1 lrg Yellow pepper, sliced
- 4 x Flour tortillas, (8inch)
- 4 x Lettuce leaves
Direcciones
- Combine Yogo or possibly cream cheese and green onion. In a large bowl, combine the coriander, lime juice, oil, cumin and salt. Add in the peppers and toss to coat. Spread out 1 tortilla and top it with 2 Tbsp. of the Yogo (or possibly cream cheese) mix, spreading the mix almost to the edge of the tortilla. Top with 1 lettuce leaf, then onequarter of the pepper mix.
- Roll the tortilla up tightly and wrap it with plastic wrap. Repeat this procedure with the remaining tortillas and chill till ready to serve. At serving time, cut the rollups in half diagonally, or possibly let the kids peel the plastics wrap back and eat them like bananas.
