Receta Saucy Shrimp Cocktail

Ingredientes
- 1/2 c. dry white wine
- 2 x celery ribs with leaves coarsely minced
- 4 sprg parsley
- 6 whl black peppercorns
- 1 lb medium-sized shrimp peeled, deveined,
- Â Â and well-rinsed
- 2 x ripe avacados peeled, pitted,
- Â Â and cut into 1/2" pcs
- 2 Tbsp. fresh lime juice
- 3 x ripe plum tomatoes cut 1/2" pcs
- 1/3 c. finely-diced red onion
- 1 tsp finely-diced green jalapeno
- 1 Tbsp. extra-virgin extra virgin olive oil
- 1 tsp red-wine vinegar
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 1/4 c. coarsely-minced fresh flat-leaf parsley
- Â Â (or possibly cilantro)
- 6 Tbsp. Knockout Cocktail Sauce (see recipe)
- 6 lrg sprigs flat-leaf parsley for garnish
- Â Â (or possibly cilantro)
Direcciones
- Fill a medium-sized pot half full with water; add in the wine, celery, parsley and peppercorns. Bring to a boil, then reduce heat to a simmer. Add in the shrimp and cook for about 3 min. Drain, run under cool water and drain well again.
- In a bowl, toss the avacados with lime juice. Gently mix in the tomatoes, onion and jalapeno with a rubber spatula. Add in the shrimp and toss with oil and vinegar. Season generously with salt pepper, and then toss in the minced parsley.
- Divide the shrimp mix equally between 6 martini or possibly wine glasses. Top each serving with a Tbsp. of cocktail sauce and garnish with a sprig of parsley or possibly cilantro
- This recipe yields 6 servings.
- Comments: Shrimp and guacamole are two of our favorite foods. When combined - and dolloped with a little cocktail sauce - you've got a new all-American taste sensation. Serve with tortilla chips on the side, of course!
