Succulent schnitzels with Croatian mlinci* prepared in a slightly different and surprising way.

** Mlinci is a famous side dish in Northwestern Croatian cuisine. This thin dried flatbread is broken into pieces about 5 cm in size and soaked in boiled water or soup for a few minutes. Then it is mixed with the roasting juices.

  • 400 g pork (2 pork schnitzels)
  • ½ tbs tarragon mustard
  • 1 clove garlic, chopped
  • 2 tbs sunflower oil
  • 200 ml beer
  • 500 ml beef broth ( divided 100 + 400 ml), hot
  • 200 g dried flat bread - mlinci
  • Pinch of salt and pepper

Direcciones

Smear each schnitzel with mustard, sprinkle with chopped garlic and leave to marinate for about 20 minutes.

In hot oil sauté the schnitzels for 3-4 minutes on each side until golden. Reduce the flame.

Add beer and 100 ml of the hot beef broth; cover the pan and simmer for 30 minutes until schnitzels become very tender.

In the meantime, pour the remaining 500 ml of the hot beef broth over mlinci and allow them to absorb all the liquid. Drain. Add any remaining liquid, if necessary, to the meat.
5.
Serve schnitzels with mlinci, beer gravy and fresh cucumber salad. Season with salt and pepper before serving.
