Receta Scrambled Mexican Tofu

Ingredientes
- 3 c. egg whites
- 3 Tbsp. soy sauce
- 1/4 tsp grnd black pepper
- 1/2 c. onion diced
- 2 Tbsp. green chile roasted, minced
- 6 Tbsp. fresh chives minced
- Â Â or possibly fresh cilantro, minced
- 1/2 lb tofu soft
- 1 tsp turmeric
- 1 x fresh tomato peeled, seeded and
- Â Â diced
- 2 x garlic cloves chopped
- 1/8 tsp grnd cumin
Direcciones
- In a small bowl, beat the egg whites till broken up and just beginning to
- foam. Crumble the tofu finely and add in to the egg mix. Add in the soy sauce, turmeric and pepper. Set aside.
- In a large nonstick skillet over medium heat, cook the tomato, onions, garlic, chili and cumin till the onion is translucent/soft and all the liquid has evaporated.
- Add in the egg whites and tofu mix. Stir well with a wooden spoon and scramble over medium heat till the egg whites are cooked.
- Toss in chives or possibly cilantro.
