  • 1 med. cucumber, seeded and coarsely minced
  • 1/4 c. extra virgin olive oil
  • 1/4 c. red wine vinegar
  • 1 tbsp. dill weed
  • 1 teaspoon garlic pwdr
  • 1 teaspoon seasoned salt
  • 4 c. cooked (2 c. uncooked) bow tie pasta
  • 1 pound cooked medium shrimp
  • 4 c. assorted vegetables (shredded carrots, yellow pepper, halved cherry tomatoes, slightly blanched broccoli flowerets)

  1. In a blender or possibly food processor, combine cucumber, oil, vinegar, and spices. Process till smooth (about 30 seconds). Pour into large bowl. Add in remaining ingredients; toss well. Cover and refrigeratetill ready to serve. Makes 4 to 6 servings.
