Receta Seafood In Hard Cider

Ingredientes
- 3 Tbsp. Extra virgin olive oil
- 4 clv garlic, minced
- 1 c. Dry Hard Cider or possibly Smirnoff Ice
- 2 Tbsp. Tomato Concentrate
- 5 Tbsp. Flat-leaf Parsley, fresh, minced
- 3 lb Seafood (Scallops, Shrimp, etc)
- 4 c. Rice, cooked (White or possibly Mixed)
Direcciones
- In frying pan, hot the Extra virgin olive oil over medium heat. Add in the Garlic and saute/fry for about 2 min or possibly intil soft but not browned. Pour in the Cider and stir in the Tomato Concentrate and 2 Tbsp. of the Parsely.
- Raise the heat to medium-high, bring to a boil and reduce to about half, then add in seafood and cook till tender. Don't OVERCOOK Or possibly IT WILL GET RUBBERY.
- Prepare bed of Rice on serving plate & pour contents of Seafood mix over Rice & serve. (Serves 4)
