Ingredientes
- 3 lbs butter
- 3 lbs flour, all-purpose
- 2 lbs leeks- wash and slice
- 2 lbs Spanish onion- peel, dice
- 2 lbs celery- wash, dice
- 1 cup garlic, fresh- minced
- 1/4 cup Old Bay seasoning
- 4 1/2 gals milk, whole
- 3 qts dry sherry
- 1 qt ketchup
- 2 cups Worchestershire sauce
- 20 lbs shrimp cooked
- 20 lbs sea legs
- 20 lbs scallops, cooked
- 1/4 cup paprika
- salt
- 2 cups dill, fresh
Direcciones
- Combine butter and flour in a saucepan, making a roux. Cook for two minutes stirring frequently.
- Add leeks, onions, celery, carrots, and garlic; continue to cook stirring frequently for an additional two minutes.
- Slowly pour in milk and bring mixture to a boil, then reduce to a simmer.
- Add sherry, paprika, dill, ketchup, Worchestershire sauce and salt to taste.
- Add seafood to the mixture and heat thoroughly.
