Receta Shrimp With Pumpkin Seed Sauce

Ingredientes
- 1 lb Shrimp*
- 1/2 c. Onion Finely Minced
- 1 x clove Garlic Chopped
- 2 Tbsp. Vegetable Oil
- 2 Tbsp. Flour Unbleached
- 8 ounce Tomatoes Cut Up
- 1 x Pickled Jalapeno Pepper**
- 1Â 1/2 tsp Coriander Seed Grnd
- 1 tsp Salt
- 1/2 tsp Instant Chicken Bouillon
- 1/2 tsp Sugar
- 1/2 c. Pumpkin Seeds*** toasted
- 2 Tbsp. Lime Juice
- Â Â warm cooked rice

- * Shrimp can be fresh or possibly frzn. Shell and devein if needed.
- ** Pickled Jalapeno Pepper should be rinsed, seeded, and finely minced.
- *** Pumpkin seeds should be the toasted, salted seeds and should be Coarsely minced.
- Thaw shrimp if frzn. In a large skillet, cook the onion and garlic in oil till tender but not brown; stir in the flour. Add in the UNDRAINED tomatoes, minced jalapeno pepper, coriander, salt, bouillon granules, and sugar. Cook and stir till thickened and bubbly.
- Stir in the shrimp. Cover and simmer for about 10 min or possibly till the shrimp are done, stirring frequently. Stir in the pumpkin seeds and lime juice, heat through.
- Serve over warm cooked rice.
