I LOVED this kebab marinade! The original recipe uses lamb, which would be delicious, but I used chicken breast and it was also delicious. Will definitely be making this again.

  • Chicken skewers (I cheated and bough the pre-skewered ones from the store, just make sure they don't have a marinade already).
  • Kebab veggies, like peppers, onions, mushrooms.
  • 1 onion, thinly sliced
  • 3 T minced garlic
  • 1/4 c lemon juice
  • 1/3 c olive oil
  • 1 T fresh thyme, chopped
  • 1 T paprika (I used Hungarian, but you could probably use smoked)
  • 1/2 tsp chili flake
  • 2 tsp ground cumin
  • 1/2 c fresh parsley, chopped
  • 1/3 c fresh mint, chopped

Direcciones

  1. In a bowl combine everything from onion to mint. Mix well. It should come out like a thin paste.
  2. Prep your skewers of veggies and meat and pour the marinade over top.
  3. Let it sit for several hours or overnight.
  4. Cook the skewers on a hot grill until they are cooked through, about 15 minutes for chicken breast.
  5. If you like, put the onion from the marinade into a sauce pan and caramelize them while you cook. They go great up on top of the meat! Make sure you cook them thorough to eliminate any bacteria from the chicken.
