Simple Indian lentil soup - great served with rice and yogurt. Masoor dal is actually a little orange in color when you buy it but turns yellow after cooking!

  1. Boil lentils in water with salt, sugar and turmeric
  2. In separate pan, fry chopped garlic, chopped chili, chopped tomato and jeera in oil
  3. Combine ingredients and boil for 15-20 minutes
  4. Top with cilantro and serve over rice

    As a variation, add 1/2 cup finely chopped squash in Step 3 and adjust salt to taste.

      I love the idea of adding squash. I have butternut squash right now. I don't have green chili. Can I skip it? What could I substitute to keep it flavorful? I'm cooking for kids, so not too spicy!
