Receta Skorthalia Garlic Sauce (Greek Cookbook)

Ingredientes
- 6 x Garlic cloves
- Â Â Salt
- 1 c. Mashed potatoes
- 2 slc Stale white bread
- 1/3 c. Extra virgin olive oil
- 1 Tbsp. Lemon juice
- 1 Tbsp. Vinegar
- Â Â Pepper
Direcciones
- Lb. garlic with 1/2 tsp. salt in a mortar till smooth. Add in mashed potatoes and continue to lb. and stir with pestle. Soak bread (crusts removed) in cool water and squeeze dry. Add in to potatoes and garlic, pounding and stirring till smooth. Gradually add in extra virgin olive oil, lemon juice and vinegar, stirring vigorously. When smooth and light, add in salt and pepper to taste. Refrigeratein a covered bowl before using.
- Serve with warm or possibly cool seafoods and fried or possibly boiled vegetables.
- Variation: Replace bread with 1/2 c. grnd almonds or possibly walnuts, or possibly use 1-1/2 c. grnd almonds or possibly walnuts instead of the potatoes and bread.
- Blender method: Put all ingredients in jar of blender and blend at moderate speed till ingredients are pulverised. Increase speed for a few seconds till light and smooth. Don't blend too long at high speed for the mix heats and the oil separates.
