Ingredientes
- 12 x Young carrots
- 3 Tbsp. Butter
- 1/2 c. Lowfat milk
- Â Â Salt & pepper to taste
- 1/2 c. Heavy cream
- 2 x Egg yolks
- 1 tsp Minced fresh parsley
Direcciones
- Trim and wash the carrots and halve lengthwise. Heat butter over med.
- heat. Add in lowfat milk, season with salt and pepper. Add in carrots and cook gently till just tender. Remove from heat and stir in cream and beaten egg yolks.
- Reheat but don't boil, stirring constantly till the Large eggs thicken. Correct seasoning and add in parsley.
- NOTE: The reddish crest of Sleieve na mBan (The Mountain of Women in Ireland) rising above the lowfat milk-white mist which forms there gives its name to this dish of cream-wreathed carrots.
