- Pumpkin bread with chopped walnuts and sweetened dried cranberries

- 1½ cups all-purpose flour
- ½ cup wheat bran
- 1½ tsp baking powder
- ½ tsp each baking soda, salt and ground cinnamon
- ¼ tsp each ground ginger and ground cloves
- 1 cup mashed pumpkin (canned or fresh)
- 2 eggs
- ½ cup lightly packed brown sugar
- ½ cup low-fat plain yogurt
- 2 tbsp canola oil
- 1 tsp vanilla extract
- ½ cup chopped walnuts
- 1/3 cup sweetened dried cranberries

%20and%20trick-or-treating%20with%20the%20kids.%20I%20also%20ate%20too%20much%20leftover%20candy%20and%20cooked%20fresh%20pumpkin%20for%20the%20first%20time.%3C/p%3E%3Cp%3EThankfully%20cooking%20pumpkin%20is%20a%20simple%20thing%20to%20do.%20To%20make%20a%20pumpkin%20pur%C3%A9e%20for%20this%20quick-bread,%20I%20scraped%20out%20about%204%20cups%20of%20flesh%20from%20the%20pumpkin%20we%20carved%20for%20Halloween%20and%20steamed%20it%20for%2020%20minutes%20in%20a%20steamer%20pot.%20Once%20it%20had%20softened%20I%20pur%C3%A9ed%20it%20with%20a%20hand%20blender.%20Half%20the%20puree%20was%20destined%20for%20this%20recipe%20and%20the%20other%20half%20for%20the%20freezer%20(apparently%20it%20freezes%20well).%20If%20you%E2%80%99re%20not%20into%20making%20your%20own%20pur%C3%A9e,%20canned%20pumpkin%20can%20also%20be%20used%20in%20this%20recipe.%3C/p%3E%3Cp%3EHalloween%20has%20a%20way%20of%20heightening%20my%20senses%20and%20energy%20levels%20so%20I%20selected%20some%20equally%20revved-up%20music%20to%20fill%20my%20kitchen%20while%20baking.%20I%20went%20with%20an%20alternative%20mix%20I%20put%20together%20back%20in%20my%20university%20days.%20It%20included%20songs%20from%20Ministry,%20Nirvana%20and%20I%20Mother%20Earth%20(Good%20Canadian%20Band).%20There%20were%20also%20a%20few%20song%20selections%20from%20the%20Smashing%20Pumpkins%20which%20seemed%20somewhat%20appropriate%20as%20I%20smashed%20a%20few%20pumpkins%20as%20an%20inconsiderate%20teenage%20trick-or-treater%20back%20in%20the%20day.%20In%20my%20defense%20I%20would%20only%20take%20issue%20with%20your%20pumpkin%20if%20you%20gave%20me%20an%20apple.%20Not%20an%20excuse,%20just%20an%20explanation%20and%20a%20bit%20of%20insight%20into%20my%20cruel%20actions.%3C/p%3E%3Cp%3EWhile%20making%20the%20pumpkin%20bread%20I%20called%20an%20audible%20and%20added%20in%201/3%20cup%20of%20sweetened%20dried%20cranberries%20just%20before%20mixing%20the%20batter.%20The%20cranberries%20are%20totally%20optional%20but%20I%20was%20happy%20with%20the%20call%20because%20they%20added%20some%20color%20and%20complimented%20the%20other%20flavors%20in%20the%20bread.%20Looks%20like%20I%E2%80%99ll%20be%20cooking-up%20(not%20smashing)%20more%20pumpkins%20so%20I%20can%20freeze%20the%20pur%C3%A9e%20and%20make%20more%20pumpkin%20bread%20throughout%20the%20winter%20months!%3C/p%3E%3Cp%3ESmashing%20Pumpkin%20and%20Walnut%20Quick-Bread%3C/p%3E%3Cp%3ELyrics%3C/p%3E%3Cp%3ESpray%20a%209%20x%205-inch%20loaf%20pan%20with%20cooking%20spray.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20flour,%20wheat%20bran,%20baking%20powder,%20baking%20soda,%20salt,%20cinnamon,%20ginger%20and%20ground%20cloves.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20pumpkin,%20eggs,%20brown%20sugar,%20yogurt,%20oil%20and%20vanilla.%20Whisk%20until%20combined.%20Add%20to%20dry%20ingredients%20and%20mix%20just%20until%20moistened.%20Gently%20fold%20in%20walnuts%20and%20dried%20cranberries.%20Spoon%20batter%20into%20prepared%20pan%20and%20smooth%20top.%3C/p%3E%3Cp%3EBake%20in%20a%20350%C2%BA%20F%20oven%20for%2035%20to%2040%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20center%20of%20loaf%20comes%20out%20clean.%20Cool%20loaf%20in%20pan%20for%2010%20minutes.%20Remove%20loaf%20from%20pan%20and%20let%20cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EVolume:%20Makes%201%20loaf,%2012%20slices%3C/p%3E%3Cp%3ETIP:%20For%20more%20pumpkin%20flavor%20use%2011/4%20cups%20mashed%20pumpkin%20and%20reduce%20the%20yogurt%20to%201/4%20cup.%3C/p%3E%3Cp%3EThe%20Kitchen%20Roadie%3C/p%3E%3Cp%3Ebrent@cookapalooza.com%3C/p%3E){kind=link}
