Receta Smoked Duck And Walnuts With Winter Greens

Ingredientes
- 1/3 c. fresh tangerine juice
- Â Â (or possibly orange juice)
- 1/4 c. walnut oil
- Â Â (or possibly extra-virgin extra virgin olive oil)
- 2 Tbsp. extra-virgin extra virgin olive oil
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. raspberry vinegar
- 1 tsp Dijon mustard
- 1/2 tsp paprika
- 1/2 tsp sugar
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 5 x tangerines or possibly 3 oranges
- 3 x heads Belgian endive trimmed, and
- Â Â thinly sliced crosswise
- 3 c. bite-size pcs frisee lettuce
- 3 c. bite-size pcs radicchio
- 1 bn watercress thick stems trimmed
- 4 ounce smoked duck breast cut thin strips
- Â Â (or possibly smoked turkey breast)
- 1/2 x red onion thinly sliced
- Â Â into rings
- 2/3 c. walnut halves toasted
- 1/3 c. fresh pomegranate seeds
Direcciones
- Whisk first 9 ingredients in small bowl till well blended. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature and whisk before using.)
- If using tangerines, remove peel; separate into segments. If using oranges, cut off peel and white pith; cut between membranes to release segments into bowl. Toss endive, frisee, radicchio, and watercress in large bowl with sufficient dressing to coat.
- Divide salad among 8 plates. Top each with smoked duck, onion rings, and tangerine or possibly orange segments. Sprinkle with walnuts and pomegranate seeds. Drizzle with some of remaining dressing.
- This recipe yields 8 servings.
