%20Frank%20Miller,%20one%20of%20the%20%E2%80%9Cwe%E2%80%9D,%20called%20me%20the%20next%20day%20and%20we%20set%20up%20a%20day%20for%20me%20to%20start.%20My%20previous%20food-for-hire%20experience%20consisted%20of%20a%20school-year%20stint%20at%20the%20elementary%20school%20lunch%20program%20and%20I%20jumped%20at%20the%20chance%20to%20do%20something%20that%20didn%E2%80%99t%20involve%20peanut%20butter,%20Jello,%20or%20fish%20sticks.%3C/p%3E%3Cp%3EI%20spent%20that%20weekend%20reading%20up%20on%20Mastering%20the%20Art%20of%20French%20Cooking,%20Joy%20of%20Cooking,%20and%20my%20Time/Life%20series%20of%20ethnic%20food.%20I%20spent%20the%20first%20three%20days%20of%20my%20culinary%20career%20painting%20bar%20stools,%20then%20moved%20on%20to%20unpacking%20stacks%20of%20pantry%20items,%20kitchen%20equipment,%20and%20fresh%20produce.%20%20We%E2%80%94the%20braless,%20sandal-footed,%20loose-haired,%20apronless%20cooks%E2%80%94eventually%20chopped%20onions,%20diced%20tomatoes,%20sliced%20turkey%20breasts,%20simmered%20sauces%20and%20began%20the%20Sound%20Food%20adventure.%3C/p%3E%3Cp%3EOur%20fearless%20leader,%20Jeffrey,%20radiated%20cool%20and%20exotic.%20He%20was%20slender%20and%20lithe%20with%20a%20Sikh-like%20beard%20and%20dressed%20in%20flowing%20white%20clothes.%20His%20tongue%20was%20as%20sharp%20as%20his%20knives%20and%20no%20culinary%20indiscretion%20went%20unnoticed.%20%E2%80%9COnly%20careful%20attention%20to%20every%20detail%20will%20produce%20the%20desired%20effect%E2%80%9D.%20%20We%20were%20to%20mince%20onions%20with%20care,%20peel%20garlic%20efficiently,%20simmer%20soups%20slowly,%20and%20bone%20chickens%20thoughtfully.%20Jeffrey%20introduced%20his%20staff%20to%20tofu,%20nori,%20steamed%20black%20cod,%20knobs%20of%20ginger,%20bulbs%20of%20garlic,%20daikon,%20a%20proper%20stir-fry,%20tamari,%20shiitake%20mushrooms,%20tempura,%20and%20the%20concept%20of%20serving%20fresh,%20regional%20ingredients.%20I%20was%20in%20heaven.%3C/p%3E%3Cp%3EI%20started%20in%20the%20kitchen%20as%20a%20lunch%20cook.%20My%20friend%20(and%20one%20of%20the%20part/owners)%20Rae%20Anne%20and%20I%20manned%20the%20line%E2%80%94her%20with%20a%20Batchelor%E2%80%99s%20degree%20in%20Nutrition%20and%20me%20with%20three%20years%20of%20English%20Lit.%20It%20took%20us%20three%20weeks%20working%20lunches%20before%20we%20realized%20how%20much%20easier%20it%20would%20be%20to%20use%20the%20grill%20(not%20a%20wood-burning,%20Mario%20Batali%20grill,%20but%20an%20electric,%20pancake%20&%20egg,%20truck-stop%20grill)%20instead%20of%20a%20saut%C3%A9%20pan%20to%20make%20hamburgers.%20The%20restaurant%20filled%20with%20hippy%20children,%20long-haired%20musicians,%20long-skirted%20waitron%20units,%20an%20incidental%20bluish%20cloud%20of%20smoke%20(who%20knew%20where%20that%20came%20from),%20laughter,%20live%20music,%20a%20few%20curious%20Spinnaker%20regulars,%20and%20an%20occasional%20straight%20local%20in%20for%20a%20good%20bowl%20of%20soup%20and%20a%20sideways%20glance%20at%20the%20freaks.%3C/p%3E%3Cp%3EOur%20numbers%20were%20certainly%20not%20of%20Woodstock%20proportion,%20but%20there%20was%20the%20same%20good%20will,%20warmth,%20radiant%20spirit,%20and%20friendship.%20This%20charmed%20circle%20could%20grow%20a%20bit%20tight,%20however.%20One%20day%20a%20%20waitron%20friend%20came%20back%20into%20the%20kitchen,%20sighed%20and%20said,%20%E2%80%9CI%20can%E2%80%99t%20do%20this%20anymore.%E2%80%9D%20She%20had%20been%20waiting%20on%20an%20eight-top%20that%20included%20her%20soon-to-be-ex%20husband,%20his%20new%20girlfriend,%20the%20new%20girlfriend%E2%80%99s%20ex-husband,%20that%20ex-husbands%20new%20girl%20friend%20(who%20recently%20ended%20a%20relationship%20with%20the%20ex-husband's%20new%20girlfriend),%20and%20her%20new%20boyfriend%20(who%20was%20her%20ex-husband%E2%80%99s%20new%20girlfriend%E2%80%99s%20ex-husband).%20Everyone%20at%20the%20table%20had%20slept%20with%20everyone!%20My%20friend%20quit%20that%20day%20and%20took%20a%20job%20in%20the%20city%20baking%20cinnamon%20rolls.%3C/p%3E%3Cp%3EAnyways,%20Sound%20Food%20introduced%20me%20to%20my%20real%20self.%20Frank%20Miller%20and%20Jeffrey%20Basom%20invited%20me%20in%20to%20a%20world%20of%20good%20food,%20hard%20work,%20controlled%20chaos,%20uncontrollable%20daily%20drama,%20and%20infinite%20rewards.%20I%20can%E2%80%99t%20thank%20them%20enough.%3C/p%3E%3Cp%3EJeffrey%20built%20this%20recipe%20for%20spaghetti%20sauce%20(which%20I%20still%20use)%20on%20the%20fly%20while%20boning%20fish,%20taking%20care%20of%20the%20baby,%20describing%20the%20night's%20specials,%20and%20talking%20to%20the%20Rykoff%20man.%20I%20lifted%20the%20addition%20of%20sun-dried%20tomatoes%20and%20Greek%20olive%20juice%20from%20another%20mentor.%3C/p%3E%3Cp%3ESaut%C3%A9%20onions,%20fennel%20seed,%20chili%20flakes,%20onion%20and%20garlic%20in%20hot%20olive%20oil%20(not%20too%20hot,%20don%E2%80%99t%20let%20the%20oil%20smoke)%E2%80%94first%20on%20high%20then%20when%20slightly%20brown,%20add%20salt%20and%20finish%20on%20lower%20heat%20until%20translucent.%3C/p%3E%3Cp%3EAdd%20sun-dried%20tomatoes,%20and%20herbs%E2%80%94saut%C3%A9%20until%20mixture%20is%20soft%20and%20golden.%20Deglaze%20pan%20with%201%20small%20glug%20of%20balsamic%20vinegar,%20add%20sugar.%3C/p%3E%3Cp%3EAdd%20tomatoes,%20tomato%20sauce,%20chicken%20stock%20and%20olive%20juice.%3C/p%3E%3Cp%3EWhiz%20in%20Cuisinart%20or%20with%20hand%20blender%20slightly%20for%20nicer%20texture%E2%80%94but%20definitely%20not%20mandatory.%3C/p%3E%3Cp%3ESimmer%20for%201%20hour.%3C/p%3E%3Cp%3EGreat%20with%20pasta,%20meatballs,%20sausage%20sandwiches,%20eggplant%20Parmesan,%20lasagna,%20manicotti%3C/p%3E){kind=link}
