%20This%20book%20has%20it%20all~%20history%20about%20sourdough,%20how%20to%20get%20started%20with%20sourdough,%20tips%20for%20working%20with%20sourdough,%20many%20delicious%20recipes%20and%20a%20Free%20Sourdough%20Starter%20Packet!%20After%20making%20several%20recipes%20from%20this%20recipe%20book,%20I%20decide%20to%20do%20a...Drum%20Roll%20Please.....A%20Week%20of%20Sourdough~%20I%20am%20going%20to%20share%20a%20different%20recipe%20every%20day%20for%20a%20week,%20starting%20today.%20I%20choose%20this%20week%20because%20it%20coincides%20with%20my%20Sourdough%20Surprises%20Challenge%20that%20is%20on%20the%2020th%20of%20the%20month.%20%20I%20have%20made%205%20recipes%20from%20Simply%20Sourdough%20and%202%20recipes%20are%20from%20an%20old%20issue%20of%20Hometown%20Cooking,%20that%20I%20have%20made%20many%20times.%20Before%20I%20get%20started%20I%20am%20going%20to%20give%20you%20a%20brief%20history%20of%20sourdough,%20a%20traditional%20recipe%20to%20get%20you%20started%20with%20sourdough,%20a%20few%20sourdough%20%22terms%22%20and%20a%20few%20%22tips%22%20for%20working%20with%20sourdough.%20All%20information%20can%20be%20found%20in%20the%20book%20by%20Kathy%20Doogan,%20Simply%20Sourdough%20~The%20Alaska%20Way~%20Here%20are%20two%20sites%20that%20you%20will%20find%20helpful:%20Sourdough%20Home,%20%20Weekend%20Bakery%3C/p%3E%3Cp%3EHistory:%20Sourdough%20is%20thought%20to%20be%20the%20oldest%20form%20of%20leavened%20bread.%20Some%20think%20it%20was%20discovered%20as%20long%20ago%20as%204000%20BC,%20when%20Egyptians%20accidentally%20left%20some%20dough%20out%20at%20room%20temperature%20and%20it%20picked%20up%20the%20wild%20yeast%20in%20the%20air%20and%20began%20rising.%20Until%20commercially%20produced%20baking%20yeast%20became%20widely%20available%20in%20the%20mid%20to%20late%2019th%20century,%20various%20forms%20of%20sourdough%20provided%20the%20primary%20method%20of%20leaving%20bread.%20When%20people%20think%20of%20sourdough,%20most%20people%20think%20of%20gold%20rushes%20and%20prospectors%20in%20the%20California%20gold%20rush%20of%201849%20and%20the%20Klondike%20gold%20rush%20of%201898.%20Alaska%20miners%20depended%20on%20their%20sourdough%20starters.%20As%20long%20as%20the%20miners%20had%20their%20starters%20and%20flour,they%20wouldn't%20go%20hungry.%20The%20miners%20treasured%20starters%20were%20passed%20down%20from%20person%20to%20person%20and%20some%20were%20even%20treated%20as%20family%20heirlooms%20and%20passed%20from%20generation%20to%20generation,%20especially%20in%20Alaska.%20Perhaps%20the%20best%20known%20sourdough%20is%20the%20distinctively%20sour%20taste%20of%20San%20Francisco%20sourdough%20bread,%20which%20one%20bakery%20there%20claims%20to%20have%20been%20making%20from%20the%20same%20starter%20since%201849.%3C/p%3E%3Cp%3EGetting%20Started:%20The%20easiest%20way%20to%20get%20started%20with%20sourdough%20is%20to%20get%20some%20starter%20from%20a%20friend%20or%20relative.%20If%20that%20isn't%20an%20option,%20you%20can%20make%20your%20own.%20When%20I%20first%20started%20my%20sourdough%20starter,%20about%20a%20year%20and%20a%20half%20ago,%20this%20is%20the%20method%20that%20I%20used.%3C/p%3E%3Cp%3ETraditional%20Sourdough%20Starter:%3C/p%3E%3Cp%3E(no%20added%20yeast;%20requires%20proofing%20before%20using)%3C/p%3E%3Cp%3E2%20cups%20water,%20room%20temperature%3C/p%3E%3Cp%3E2%20cups%20flour%3C/p%3E%3Cp%3EPlace%20ingredients%20in%20a%20large,%20wide%20mouth%20glass%20jar,%20I%20use%20Kerr%20or%20%20Ball%20%20canning%20jars,%20blend%20well%20with%20a%20wooden%20or%20plastic%20spoon.%20Cover%20loosely%20with%20a%20clean%20piece%20of%20cheesecloth%20or%20gauze.%20(this%20allows%20air%20to%20enter%20the%20jar%20so%20your%20starter%20can%20pick%20up%20wild%20yeasts%20from%20the%20environment)%20and%20place%20it%20in%20a%20warm%20spot.%20Once%20a%20day,%20remove%20half%20the%20starter%20and%20throw%20it%20away.%20To%20the%20remaining%20starter,%20add%201%20cup%20flour%20and%201%20cup%20room%20temperature%20water;%20stir%20well%20until%20most%20of%20the%20lumps%20are%20gone.%20After%203%20or%204%20days%20of%20replenishing%20the%20starter%20should%20be%20bubbly%20and%20have%20a%20pleasant%20sour%20smell.%20It%20is%20ready%20to%20be%20used%20immediately,%20or%20can%20be%20placed%20in%20the%20refrigerator%20with%20a%20loose%20cover%20and%20refrigerated%20for%20later%20use.%20Note:%20I%20always%20use%20bottled%20water,%20and%20Dakota%20Maid%20All-Purpose%20Flour%3C/p%3E%3Cp%3ESourdough%20%22terms%22%3C/p%3E%3Cp%3EHooch:%20A%20harmless%20watery%20liquid,%20varying%20in%20color%20from%20clear,%20yellow%20to%20dark%20brown.%20This%20liquid%20contains%20alcohol%20that%20forms%20on%20your%20starter,%20most%20often%20on%20top%20but%20it%20can%20form%20on%20the%20bottom.%3C/p%3E%3Cp%3EProofing:%20Allowing%20your%20starter%20to%20ferment%20and%20become%20active.%3C/p%3E%3Cp%3ESponge:%20An%20active%20starter,%20ready%20to%20use.%3C/p%3E%3Cp%3ETips:%3C/p%3E%3Cp%3ENever%20store%20your%20sourdough%20tightly%20covered;%20gas%20given%20off%20by%20fermentation%20can%20cause%20a%20tightly%20sealed%20container%20to%20explode.%3C/p%3E%3Cp%3ESourdough%20can%20react%20to%20metal%20so%20it%20is%20best%20to%20avoid%20metal%20utensils%20and%20bowls%20when%20preparing%20recipes.%3C/p%3E%3Cp%3EIf%20the%20starter%20forms%20a%20layer%20of%20liquid%20on%20top,%20don't%20worry,%20this%20is%20a%20normal%20by%20product%20of%20the%20fermentation%20process.%20Pour%20off%20the%20liquid%20if%20the%20starter%20is%20thin%20or%20stir%20it%20in%20if%20the%20starter%20is%20thick.%20The%20ideal%20consistency%20for%20starter%20is%20like%20a%20thick%20pancake%20batter%20but%20this%20varies%20from%20person%20to%20person;%20some%20prefer%20their%20starters%20thin%20and%20others%20prefer%20their%20starters%20thick.%3C/p%3E%3Cp%3ESourdough%20Coffee%20Cake%3C/p%3E%3Cp%3ECake~%3C/p%3E%3Cp%3ECombine%20sourdough%20starter,%20oil%20and%20egg.%3C/p%3E%3Cp%3EStir%20together%20dry%20ingredients%20and%20add%20to%20the%20sourdough%20mixture.%3C/p%3E%3Cp%3EPut%20dough%20into%20a%20greased%209-inch%20square%20pan.%3C/p%3E%3Cp%3EWith%20a%20pastry%20blender,%20mix%20together%20crumb%20topping%20ingredients.%20Sprinkle%20topping%20on%20top%20of%20batter.%3C/p%3E%3Cp%3EBake%20at%20350%20for%2035%20minutes%20or%20until%20golden%20brown%20and%20toothpick%20inserted%20near%20the%20middle%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20on%20wire%20rack.%3C/p%3E%3Cp%3EMix%20together%20icing%20ingredients,%20drizzle%20over%20warm%20coffee%20cake.%3C/p%3E%3Cp%3E*I%20have%20made%20this%20coffee%20cake%20with%20and%20without%20icing.%20I%20like%20the%20added%20sweetness%20from%20the%20icing,%20so%20I%20usually%20serve%20it%20with%20the%20icing~%3C/p%3E%3Cp%3EHealth%20Note:%20Mushrooms%20supply%20the%20vitamin%20called%20biotin.%20Biotin%20is%20needed%20to%20help%20the%20body%20use%20carbohydrates%20and%20fats~%3C/p%3E){kind=link}
