Ingredientes

  • 300 gm rice noodles broken into short lengths
  • 1 Tbsp. srunflower oil
  • 1 tsp black mustard seeds
  • 10 x curry leaves
  • 2 tsp split black lentils (urad dal) washed and soaked for 5 min
  • 4 x green chillies slit lengthways so seeds are exposed but the chilli is not broken in 2
  •     salt
  •     sugar

Direcciones

  1. Put the noodles in a pan of water and bring to the boil.
  2. Take off the heat and drain.
  3. Heat the oil and fry the mustard seeds.
  4. When they pop add in the curry leaves.
  5. Add in the lentils and fry till golden brown then add in the chillies.
  6. Stir in the noodles season with salt and sugar and spunkle some water on top.
  7. Cook till the noodles are soff.
  8. From south India and can be served for breakfast or possibly tea. It also makes a good snack while travelling and it always reminds me of long train journeys.
