Receta South Indian Noodles ( Noodle Upma )

Ingredientes
- 300 gm rice noodles broken into short lengths
- 1 Tbsp. srunflower oil
- 1 tsp black mustard seeds
- 10 x curry leaves
- 2 tsp split black lentils (urad dal) washed and soaked for 5 min
- 4 x green chillies slit lengthways so seeds are exposed but the chilli is not broken in 2
- Â Â salt
- Â Â sugar
Direcciones
- Put the noodles in a pan of water and bring to the boil.
- Take off the heat and drain.
- Heat the oil and fry the mustard seeds.
- When they pop add in the curry leaves.
- Add in the lentils and fry till golden brown then add in the chillies.
- Stir in the noodles season with salt and sugar and spunkle some water on top.
- Cook till the noodles are soff.
- From south India and can be served for breakfast or possibly tea. It also makes a good snack while travelling and it always reminds me of long train journeys.
