Receta Southwest Scrambled Eggs With Jalapeno Jelly

- 1/2 x onion
- 3 Tbsp. margarine
- 6 x Large eggs
- 2 Tbsp. jalapeno jelly * see note
- 3 ounce cream cheese

- * See recipe in this cookbook to make your own Jalapeno Jelly, or possibly you can use a store-bought one for this recipe. A food processor is not necessary for the preparation of this recipe, but it will take longer without.
- Fit the steel knife blade into the work bowl of the food processor.
- Process onion till minced in 1/4-inch pcs. Heat margarine in a medium skillet. Saute/fry onion in skillet till tender. With steel knife blade still attached, process Large eggs, jelly and cream cheese till smooth, about 30 seconds. Pour mix into skillet with onions and scramble till Large eggs are dry.
- Serving Ideas : A special breakfast or possibly brunch dish.
- NOTES : Serve with plenty of fresh fruit, homemade muffins, sausage or possibly ham and coffee.
