Receta Spanikorizo- Spinach and Rice
This is a hearty veggie dish that most Greeks eat during Lent and fast days. Easy to make and delicious,
Ingredientes
- 1 Lb bag frozen spinach
- 1 Large onion
- 3 Tbs minced fresh garlic
- 4 Tbs Butter
- 1 Small Can tomato paste
- 1/2 Cup olive oil
- 5 Ripe tomatoes or 2 Cups of canned whole tomatoes
- 1 Cup rice ~ Uncle Ben's
- 2 Cups water
- Salt and pepper
Direcciones
- In a large heavy pot place olive oil and saute chopped onions until soft, and then add chopped garlic
- Add peeled fresh tomatoes or canned tomatoes and spinach
- Add tomato paste and water
- Stir briskly and then add rice (uncooked) and stir
- Allow to simmer for 10 minutes and cover turning off flame
- Allow to sit for an additional 10 minutes
- Take off cover and add butter
- Add salt and pepper to taste
