Receta Spanish tortilla
Ingredientes
- 12 eggs
- 20 new potatoes, cooked and sliced in ½
- Small handful of wild rocket leaves, roughly chopped
- 100g sliced charcuterie (prepared meat eg. ham or salami)
- 1 small chorizo, cooked, peeled and sliced
- 300ml single cream
- Pinch of salt and pepper, to season
- Few drops Tabasco
- You'll also need:
- Deep oven-proof frying pan

- Preheat the oven to 160ËC/325ËF/gas 3.
- Mix the eggs, Tabasco, salt, pepper and cream together in a large bowl.
- Add the new potatoes to the bowl, along with the rocket, sliced charcuterie and chorizo.
- Prepare the deep oven-proof pan by heating it, then place a knob of butter in it and wipe it around the pan until melted.
- Pour in the tortilla mixture, cook on a moderate heat for 8-10 mins (no stirring) until it starts to come away from the sides of the pan.
- Place the pan in the preheated oven for 10 min.
- Test to see whether itâs cooked through by poking it with a metal skewer. The skewer should come out clean if it's cook.
- Carefully remove the pan from the oven and turn the tortilla out onto a plate. Slice it and eat hot or cold.
