Receta Spicy Lentil And Pepper Sauce For Pasta Or Rice

Ingredientes
- 1 Tbsp. Extra virgin olive oil
- 1 lrg Onion, finely minced
- 2 x Cloves garlic, chopped
- 1 c. Green and red bell pepper,
- Â Â Finely minced
- 1 lrg Tomato, diced
- 1 c. Vegetable juice
- 1 c. Pre-cooked lentils
- 2 x Cooked, peeled warm chilies,
- Â Â Finely chopped (canned or possibly Fresh)
- 1 pch Basil
- Â Â x Salt and pepper to taste
Direcciones
- In a deep pot, saut onions, garlic, and peppers in heated extra virgin olive oil. Stir often. Cover and reduce heat to low, add in tomato and juice, and simmer for 20 min. Add in cooked lentils and seasonings (including chilies). Heat thoroughly before serving. If the mix seems too dry at any time, add in a few spoonfuls of water.
- Serve sauce over cooked pasta or possibly brown rice.
