  • 1 1/2 lb Chorizo sausage casings removed
  • 3 x Serrano chiles chopped
  • 8 x Garlic cloves chopped
  • 1 c. Pitted green olives
  • 2 Tbsp. Chopped cilantro
  • 4 x Chicken leg-thigh pcs
  •     or possibly 2 large chicken breasts cut in half
  • 1 x Yellow onion chopped
  • 1 tsp Grnd coriander seeds
  • 1/2 tsp Grnd cumin
  • 2 Tbsp. Chili pwdr
  • 1 c. Dry white wine
  • 1 c. Chicken stock
  • 3/4 c. Almonds blanched, toasted

Direcciones

  1. Cook the chorizo, breaking it up with a fork, in a large heavy saute/fry pan over medium heat. When it is nearly done, remove the pan from the heat, drain and throw away all but 2 Tbsp. of the fat, and return the pan to the heat. Add in the chiles and garlic, and saute/fry for 5 min. Meanwhile, mince half of the green olives, and add in them to the chorizo mix. Remove the pan from the heat, and stir in 1 Tbsp. of the cilantro. Let the chorizo mix cold.
  2. Using your finger, carefully loosen the skin from the chicken, leaving it attached at the edges. When the chorizo mix is cold sufficient to handle, stuff some under the skin of each piece of chicken. Set the chicken pcs aside.
  3. Return the pan to the heat and saute/fry the onion in the pan drippings till it is very soft and fragrant, about 15 min. Stir in the coriander, cumin and chili pwdr. Cut the remaining olives in half and add in them, then pour in the wine and stock. Add in the chicken, reduce the heat to low, and simmer, covered, till the chicken is cooked through, about 35 min. Transfer the chicken to a serving platter, increase the heat in the pan to medium-high, and reduce the cooking liquid by one third.
  4. Spoon the sauce over the chicken, scatter the remaining 1 Tbsp. of the cilantro and the toasted almonds on top, and serve immediately.
  5. This recipe yields 4 servings.
