Receta Steamed Fish with Green Mango sauce
Ingredientes
- 1 whole clean red lapu-lapu fish
- salt and pepper to taste
- 1 tsp of rum
- 1 cup of water
- 1 medium-sized onion, sliced
- 1 pc red bell pepper, cut into strips
- 1 thum-sized ginger
- 1 stalk of celery, cut 1 inch diagonally
- Sauce:
- 1/4 cup butter
- 2 cups of kangkong leaves
- 1 cup of shredded mango
- 1 stalk of lemon grass, white portions only, cut into 1 inch
- 1 250 ml all-purpose cream
- salt and pepper to taste
Direcciones
- Rub fish with salt and pepper and rum.
- Steam with remaining ingredients for about 20 minutes. Discard vegetables, then arrange fish on a platter reserving broth for later.
- Melt butter and saute kangkong, green mango and lemon grass until limp.
- Add in reserved broth and simmer for about two minutes. Cool and put in a blender until mixture is smooth.
- Slowly stir in cream and adjust seasonings. Pour over prepared fish.
