%3C/p%3E%3Cp%3EI%20baked%20after%20such%20a%20long%20time%20on%20Valentine's%20Day%20to%20surprise%20my%20dear%20husband%20when%20he%20came%20home%20for%20lunch.%20Every%20year%20on%20Valentine's%20day%20I%20bake%20something%20with%20heart%20shape%20to%20mark%20the%20essence%20of%20the%20day.%20During%20first%20year%20of%20my%20blog,%20it%20was%20the%20heart-shaped%20NY%20Style%20Cheesecake,%20last%20year%20it%20was%20the%20Red%20Velvet%20Cake%20and%20this%20year%20Strawberry%20Cupcakes%20with%20lacy%20chocolate%20hearts.%20I%20had%20seen%20this%20recipe%20on%20Martha%20Stewart's%20site%20and%20was%20thinking%20of%20baking%20it%20for%20long.%20Valentine's%20day%20seemed%20like%20the%20perfect%20occasion.%20I%20iced%20the%20cupcakes%20with%20fluffy%20whipped%20cream%20with%20some%20fresh%20strawberry%20puree%20in%20it.%20It%20tasted%20awesome.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Line%20a%2012-cup%20muffin%20tin%20with%20cupcake%20liners;%20set%20aside.%3C/p%3E%3Cp%3EPlace%20strawberries%20in%20a%20small%20food%20processor;%20process%20until%20pureed.%20Set%20aside%20about%202%20tbsp%20of%20puree%20for%20frosting%20and%20keep%201/3%20cup%20aside%20for%20baking%20cupcakes.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20flour,%20baking%20powder,%20and%20salt.%20In%20another%20small%20bowl,%20mix%20together%20milk,%20vanilla,%20and%20strawberry%20puree.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20the%20paddle%20attachment,%20cream%20butter%20on%20medium-high%20speed,%20until%20light%20and%20fluffy.%20Gradually%20add%20sugar%20and%20continue%20to%20beat%20until%20well%20combined%20and%20fluffy.%20Reduce%20the%20mixer%20speed%20to%20medium%20and%20slowly%20add%20egg%20and%20egg%20whites%20until%20just%20blended.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20low,%20slowly%20add%20half%20the%20flour%20mixture;%20mix%20until%20just%20blended%20alternating%20with%20milk%20mixture.%20Start%20and%20finish%20with%20flour%20mixture%20until%20just%20blended.%3C/p%3E%3Cp%3EDivide%20batter%20evenly%20among%20prepared%20muffin%20cups.%20Transfer%20muffin%20tin%20to%20oven%20and%20bake%20until%20tops%20are%20just%20dry%20to%20the%20touch,%2020-23%20minutes.%20Transfer%20muffin%20tin%20to%20a%20wire%20rack%20and%20let%20cupcakes%20cool%20completely%20in%20tin%20before%20icing.%3C/p%3E%3Cp%3EFor%20Icing%3C/p%3E%3Cp%3E1%20cup%20heavy%20whipping%20cream%3C/p%3E%3Cp%3E3%20tbsp%20powdered%20sugar%3C/p%3E%3Cp%3E2%20tbsp%20strawberry%20puree%3C/p%3E%3Cp%3EKeep%20the%20bowl%20of%20your%20electric%20mixer%20and%20whisker%20attachment%20in%20freezer%20for%205%20min%20before%20using.%20Take%20the%20cream%20out%20of%20fridge%20right%20when%20you%20are%20ready%20to%20make%20the%20icing.%20Beat%20the%20cream%20with%20strawberry%20sauce%20and%20sugar%20high%20speed%20until%20soft%20peak%20forms.%20Pipe%20into%20the%20cone%20and%20keep%20in%20fridge%20until%20ready%20to%20ice%20the%20cupcakes.%3C/p%3E%3Cp%3EFor%20Lacy%20Chocolate%20Hearts%3C/p%3E%3Cp%3E%C2%BD%20cup%20semi-sweet%20baking%20chocolate%20chips%3C/p%3E%3Cp%3EParchment%20paper%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20chips%20using%20double%20boiler%20method.%20Once%20it%20cools%20a%20bit,%20spoon%20into%20the%20re-sealable%20cone%20and%20make%20a%20small%20hole%20on%20the%20tip.%20Spread%20parchment%20paper%20on%20a%20baking%20sheet%20and%20pipe%20chocolate%20into%20hearts,%20filling%20in%20with%20squiggles%20(be%20sure%20squiggles%20are%20at%20least%201/4%20inch%20thick%20so%20hearts%20won't%20break%20when%20removed).%3C/p%3E%3Cp%3EFreeze%20hearts%20until%20set,%20about%2015%20minutes.%20Remove%20hearts%20using%20an%20offset%20spatula%20right%20when%20you%20are%20ready%20to%20garnish.%3C/p%3E%3Cp%3EPlease%20your%20Valentine%20and%20your%20kids%20:))%3C/p%3E%3Cp%3EEnjoy!!%3C/p%3E){kind=link}
