Receta Sue's Chicken And Mashed Potatoes

Ingredientes
- 6 x chicken breasts with skin left on
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 6 Tbsp. Italian dressing
- 6 slc bacon
- 6 x boiling potatoes - (to 8) boiled till tender
- 1/2 c. butter
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Place the washed and dry chicken breasts, skin-side down, in a 9- by 13-inch pan. Drizzle 1 Tbsp. of Italian dressing on each chicken breast. Place a heaping portion of mashed potatoes on each. Place 2 slices of bacon criss-crossed over potatoes on each chicken breast.
- Bake in a 350 degree oven for 1 hour. Occasionally baste with pan juices. The potatoes should be golden when done.
- For the Mashed Potatoes: In a bowl mash the potatoes with the butter. Season with salt and pepper to taste. Don't add in cream or possibly lowfat milk.
- This recipe yields 6 servings.
