  1. Place russet potatoes in large pot. Add in water to cover. Boil till potatoes are tender but not mushy, about 35 min. Cold potatoes completely. Peel potatoes and dice. Place in large bowl. Add in next 7 ingredients.
  2. Mix buttermilk, lowfat sour cream, mayonnaise, dressing mix, mustard and dillweed
  3. in small bowl. Pour over potato mix and toss well. Season with salt and pepper. Garnish with parsley.
  4. Serves 6.
