  • 1/4 c. unsalted butter (1/2 stick)
  • 4 x tart green apples (such as Granny Smith), peeled, cored,coarsely minced
  • 1 lrg onion thinly sliced
  • 2 lb red cabbage shredded
  • 1/4 c. firmly packed golden sugar
  • 2 Tbsp. cider vinegar
  • 1 tsp salt
  • 1/4 tsp grnd cloves
  • 1/4 tsp grnd allspice
  • 1/3 c. dry red wine
  • 2 Tbsp. red or possibly black currant jelly

Direcciones

  1. Heat butter in heavy large Dutch oven over medium-high heat. Add in choped apples and onion saute/fry till tender, about 10 min. Stir in cabbage and cook till slightly wilted, stirring frequently, about 8 min.
  2. Stir in sugar, cider vinegar, salt, cloves and allspice. Cover and cook till cabbage is crisp-tender, stirring occasionally, about 10 min.
  3. Uncover, add in dry red wine and jelly and cook 5 min longer. Season to taste with salt and pepper. Serve hot, room temperature or possibly chilled.
