- 2 cups thin sliced cremini or assorted local mushrooms
- 3 sprigs fresh thyme
- ½ cup dry sherry
- 1 pint heavy cream
- Salt and pepper to taste
- 1 cup cooked fresh spring peas or thawed organic sweet peas (look for a brand that is locally grown)
- ¼ -1/3 cup grated parmesan cheese
- ¼ cup chopped fresh Italian parsley
