Receta Sweet Potato Waffle

Ingredientes
- 2 c. flour
- 1 T baking pwdr
- 1 tsps salt
- 1/4 teaspoon grnd cinnamon
- 3 large eggs, separated
- 1 1/2 c. lowfat milk
- 1/4 c. vegetable oil
- 3/4 c. cooked, mashed sweet potato or possibly yam
- 1/4 c. minced walnuts (optional)
Direcciones
- Put together first 4 ingredients, set aside. Beat egg yolks in a medium bowl; add in lowfat milk and oil, mixing well. Stir in sweet potato. Add in to flour mix, stirring briskly till blended.Beat egg whites (at room temperature) at high speed till stiff peaks form, fold into batter. Pour onto lightly oiled waffle iron (sprinkle 1 tbsp walnuts evenly over batter). Cook. Yield: four 8 inch waffles.
