A little more complex than most taco salads but I think this is worth the extra effort.

Wherever peppers or chili power is called out, feel free to increase or decrease the amounts to suit your pallet.

  • MEAT
  • 2 lb hamburger
  • 1/2 cup yellow or red diced onions
  • 3 cloves garlic, finely chopped or pressed
  • 2 fresh Anaheim or New Mexico peppers, seeded and diced
  • 1/4 cup chopped pickled jalapeno slices
  • 1/2 cup fresh mild or medium salsa
  • 3 TB pure ground hot or mild chili powder to your taste
  • 1 TB ground cumin
  • 1/2 ts salt
  • CHOPPED LETTUCE
  • TOPPINGS
  • Sour cream
  • Salsa
  • Chopped onions
  • Chopped cilantro
  • Grated cheese
  • Jalapeno slices
  • Warmed cooked black or pinto beans
  • Hot sauces, your favorite(s)
  • Anything else......Go Wild!

Direcciones

  1. In a nonstick pan (or regular pan with a touch of cooking oil):
  2. Saute the onions, garlic, and fresh chopped peppers until the onion begins to turn translucent
  3. Add the hamburger and begin to brown
  4. When the hamburger is about half way browned pour off any excess fat then add the chili powder, cumin, and salt
  5. When the hamburger is finished browning add the chopped jalapenos and salsa, stir to blend, and continue cooking for 2-3 minutes or until some of the liquid from the salsa evaporates.
  6. Top lettuce with taco meat and toppings to taste.

    This looks awesome, Patrick! I'm going to try it with a mix of 2/3 black beans, 1/3 hamburger to see how it tastes (trying to eat more beans, less meat). Thanks for sharing!
