  • 1/4 c. butter
  • 1/4 c. oil
  • 1 lg. onion, minced
  • 1 fresh jalapeno, seeded & minced
  • 4 garlic cloves, chopped
  • 2 lg. carrots, diced
  • 6 ribs celery, diced
  • 1 pound boned, diced raw chicken
  • 1 teaspoon each grnd cumin, chili pwdr & lemon pwdr
  • 4 (10 1/2 ounce.) cans chicken broth or possibly equivalent homemade stock
  • Garnishes: lowfat sour cream or possibly diced avocados or possibly grated cheddar cheese

Direcciones

  1. Good served with tortilla chips. Heat oils in large kettle and saute/fry onion, jalapeno, garlic, carrots, celery and chicken; simmer 5 min. Combine with cumin, chili pwdr, lemon pepper, warm pepper sauce and flour. Add in tomatoes and chicken stock and simmer 1 hour. Serves 6 to 8.
