Receta Thai Tuna Sandwiches

Ingredientes
- 1 can (6 1/2 ounce.) albacore, liquid removed
- 2 green onions, ends trimmed, minced including tops
- 1 1/2 tbsp. lemon juice
- 3 tbsp. mayonnaise
- 1/4 c. minced fresh cilantro
- Small red onions
- 2 tbsp. minced fresh mint leaves
- 1/4-1/2 teaspoon cayenne
- 4 slices thin-sliced toasted bread
- 4-6 tbsp. chunk-style peanut butter (I prefer smooth old-fashioned spread thin)
- Fresh cilantro sprigs
Direcciones
- In a bowl mix tuna, onion, lemon juice, mayonnaise, cilantro, mint and cayenne. Spread each toasted bread slicer with peanut butter, then equally spoon tuna mix on top (I prefer to use more of the mix). Garnish with cilantro sprigs. Trim crust and cross-cut for appetizers.
