Receta The Best Blueberry Muffins

Ingredientes
- 1/2 c. (1 stick) butter at room temp.
- 1 c. sugar
- 2 lg. large eggs
- 1 teaspoon vanilla
- 2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 2 1/2 c. blueberries, frzn work well (mash 1/2 c. with fork)
- 2 c. flour
- 1/2 c. lowfat milk
- 1 T sugar mixed with 1/4 teaspoon grnd nutmeg
Direcciones
- Heat oven to 375. Use foil baking cups.Beat butter till creamy. Beat in the sugar till pale and fluffy. Beat in large eggs, one at a time. Beat in vanilla, baking pwdr and salt. Mix the mashed berries in. Mix in half the flour, then half the lowfat milk. Add in the rest of the flour and lowfat milk. Mix in remaining blueberries. Scoop batter into cups with an ice cream scoop. Sprinkle with nutmeg sugar. Bake 25-30 min. Let cool in pan 30 min before removing.
