Ingredientes

  • 6 ounce Butter
  • 1 c. Sugar
  • 1 box GS Thin Mint cookies
  •     (1 c. crumbs for cake)
  •     (1 c. crumbs for topping)
  • 2 Tbsp. Cocoa
  • 1/3 c. Cake flour
  • 8 x Large eggs, separated
  • 8 ounce Chocolate
  • 1/4 c. Heavy cream

Direcciones

  1. Cream butter and sugar together till fluffy. Add in egg yolks, one at a time.
  2. Add in cocoa and a c. of Thin Mint cookie crumbs. Add in flour and mix till just combined. Whip egg whites till stiff but not dry/ Fold egg whites into batter. Bake in 9" pan at 350F for 35 min. Allow to cold with for 15 min, then remove from pan. Cold on wire rack.
  3. Top cake with chocolate cream (8 ounce. chocolate melted with 1/4 c. heavy cream) Top chocolate cream with 1 c. Thin Mint cookie crumbs. Finish with powdered sugar.
  4. Not for the diet/cholesterol conscious but well worth the effort!
