Receta Thin Mint Cookie Cake

Ingredientes
- 6 ounce Butter
- 1 c. Sugar
- 1 box GS Thin Mint cookies
- Â Â (1 c. crumbs for cake)
- Â Â (1 c. crumbs for topping)
- 2 Tbsp. Cocoa
- 1/3 c. Cake flour
- 8 x Large eggs, separated
- 8 ounce Chocolate
- 1/4 c. Heavy cream
Direcciones
- Cream butter and sugar together till fluffy. Add in egg yolks, one at a time.
- Add in cocoa and a c. of Thin Mint cookie crumbs. Add in flour and mix till just combined. Whip egg whites till stiff but not dry/ Fold egg whites into batter. Bake in 9" pan at 350F for 35 min. Allow to cold with for 15 min, then remove from pan. Cold on wire rack.
- Top cake with chocolate cream (8 ounce. chocolate melted with 1/4 c. heavy cream) Top chocolate cream with 1 c. Thin Mint cookie crumbs. Finish with powdered sugar.
- Not for the diet/cholesterol conscious but well worth the effort!
