Receta Tomatillo and Chicken Burrito
I purchased some green tomatillos and was going to make a tomatillo salsa but then it was dinner time and well, you all know how that goes. Here is spicy burrito that is quick and easy to make. If you're not into tomatillos you can omit them. I always use organic ingredients.
Ingredientes
- 1/3C diced onion
- 2 Tbsp Olive Oil
- 3 Diced green tomatillos
- 14.5 oz can diced tomatoes with liquid
- 3 Sweet Baby bell peppers, diced
- Anchoy Chili powder (to taste)
- 2 tsp coarse grind sea salt
- 2 boneless, skinless Chicken breasts, pounded thin
- 1.5 Tbsp Salsa Fiesta Mix from Wayzata Bay Company
- Softened Goat Cheese (or any cheese you like)
- 8 tortillas
- Romaine Lettuce
- Greek Yogurt or Sour Cream
Direcciones
- In a fry pan heat 1 Tbsp olive oil over hight heat.
- Season chicken breasts with anchoy chile powder and garlic and 1 tsp sea salt.
- Sear chicken in pan and then set aside to cool.
- With liquid from can of diced tomatoes deglaze pan.
- In another skiller heat remaining olive oil over low heat and add onions, tomatillos, peppers and remaining salt and saute over low heat until onions are just tender.
- Add liquid from deglazd pan and then add tomatoes and raise heat to medium.and simmer for 5 minutes.
- While mixture is cooking slice or dice your chicken and add to pan and let simmer for a few minutes.
- Heat toritillas over an open flame or in the microwave and add mixture, lettuce, cheese and sour cream, roll it up and enjoy.
