The dried basil is best for this recipe. It is delicious, heary and creamy - perfect with a cheesy panini!

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 2 14.5 ounces canned diced tomatoes, fire-roasted if available w/ jalapenos if available
  • 2 cups Water
  • Enough chicken broth seasoning for 3-4 cups broth
  • 1 tablespoon DRIED basil
  • 1/4 teaspoon crushed red pepper flakes (omit if jalapenos in tomatoes)
  • salt and pepper to taste
  • 1/2 cup half and half - more to taste

Direcciones

  1. Heat olive oil in a pot over medium high heat.
  2. Add onion and sauté for 3 minutes. Add garlic and sauté for 1 minute.
  3. Add tomatoes, basil, water and seasonings and bring to a boil.
  4. Reduce to simmer, and let simmer about 1/2 hour, to let flavor develop.
  5. Use an immersion blender or place mixture in a blender and blend until smooth.
  6. Stir in half and half.
  7. Return to pot, and slowly heat to desired temperature. Do not boil.
