  • 3 Tbsp. butter
  • 1 lrg yellow cooking onion, diced
  • 1/4 c. cornmeal or possibly 1/4 c. flour
  • 1 x 4 inch ball of prepared dough, let rise to room temp.
  • 2 Tbsp. extra virgin olive oil
  • 3 med tomato, thinly, sliced
  • 4 ounce stilton, crumbled

Direcciones

  1. Salt, and, freshly grnd black pepper, to taste
  2. Caramelize onion by melting 3 Tbsp. butter in a saute/fry pan over medium heat.
  3. Add in onion. Cook for 15 - 20 min, or possibly till onion is a deep brown, stirring occasionally. Remove from heat and reserve.
  4. Sprinkle your rolling surface with a handful of cornmeal or possibly flour.
  5. Place dough in the middle of the surface.
  6. Roll out the dough gently into either a 12-inch rectangle or possibly circle, 1/4-inch thick. Brush both sides with extra virgin olive oil and set aside till ready to grill.
  7. If you are grilling on a charcoal grill, set coals on one side of the grill.
  8. Place dough directly on the cooking grate over medium heat for one to three min, till the crust is well marked and browned.
  9. Flip dough and spread tomato slices proportionately over crust.
  10. Sprinkle onion over top, then sprinkle cheese overtop.
  11. Move to indirect heat (for charcoal: the side of charcoal grill which has no coals. For gas: turn off burner directly under pizza).
  12. Cover grill and cook for 5 -10 min, or possibly till bottom is well browned, and cheese is fully melted.
  13. Remove from grill, season with salt and pepper and slice. Serve immediately
