Receta Tomatoes Stuffed With Quinoa Salad

Ingredientes
- 4 x tomatoes cap removed, cored
- Â Â and hollowed out (beefsteak)
- Â Â Salt
- 2 c. quinoa cooked
- 2 x pickling cucumbers peeled, seeded and
- Â Â finely diced (kirby)
- 1/3 c. fresh parsley minced
- 1/3 c. fresh mint minced
- 2 x scallion thinly sliced
- 1/4 c. vegetable broth double-strength
- 2 Tbsp. fresh lime juice
- Â Â Fresh jalapeno pepper seeded and chopped (If desired things mild, use Bell Peppers or possibly mild salsa)
Direcciones
- Salt the insides of the hollowed out tomatoes and drain them upside down on a rack. In a mixing bowl combine the quinoa, cucumbers, parsley, herb and scallions. Make a dressing of the broth, lime juice, jalapeno pepper and toss with the vegetables and quinoa. Season to taste with salt and pepper. Stuff tomatoes with the salad and serve one tomato to each person.
