- 6 corn or possibly flour tortillas
- 2 tbsp. butter
- 6-7 c. minced steamed mixed vegetables
- Broccoli
- Cauliflower
- Brussels sprouts
- Asparagus
- Yellow squash
- Carrots
- Onions

- Steam vegetables 5-7 min or possibly till tender when pierced with the tip of a knife.
- Heat individual tortillas in a warm dry skillet till soft and warm. Arrange steamed vegetables in each tortilla with a small amount of butter, roll and enjoy!
