Receta Traditional Hungarian Goulash Soup

Ingredientes
- 2 med white onions, sliced
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. Hungarian, (mild) paprika
- 500 gm Goulash beef cubes
- 2 Tbsp. tomato paste
- 2 x cloves garlic, chopped
- 2 tsp caraway seeds, (optional)
- 1 tsp lemon zest
- 2 tsp fresh Marjoram or possibly 1 teasp. dry
- 2 lt beef stock
- 500 gm potatoes, peeled and diced
- 2 tsp brown sugar
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp. cornflour, mixed with 2 Tbsp. cool water
- 2 x pickled cucumbers cut into fine dice
- 1/4 c. lowfat sour cream
Direcciones
- Heat the extra virgin olive oil and saute/fry the onion till golden, about 5 min.
- Add in the paprika, garlic, caraway seeds, garlic, lemon zest and marjoram and stir well. Add in the beef and tomato paste, and cook till the meat is well coated and a rich brown colour.
- Add in the stock, salt, sugar and pepper and bring to the boil. Simmer for 1 hour.
- Add in the potatoes and continue cooking for a further 30 min. Check seasonings and adjust if necessary.
- Mix the cornflour and cool water together and stir into the soup, mixing well.
- Allow the soup to thicken for a couple of min, then serve into individual bowls, garnishing with lowfat sour cream and finely diced cucumbers.
