Remember when you would ask your mother what was for dinner and she would answer “tuna surprise”? At my house this generally meant a tuna casserole made with tuna, noodles, cream of mushroom soup and peas. This was one of my favorite meals as a kid. A nice plate of a warm comfort food. This month we are cooking up dishes that we put together from items we already have on hand. This dish was so easy and quick to whip up and it was delicious. If you don’t have quinoa you definitely could use rice, couscous or even any pasta that you have on hand. That is what this month’s recipes are all about, being versatile and using what you have hiding in that pantry!

  1. Cook quinoa according to package directions. In a skillet heat olive oil. Saute onion, garlics and mushrooms until garlic starts to brown slightly. Place raw spinach in pan and begin to saute. Cook until spinach is done, add salt and pepper and toss. Stir in tuna and cook over heat for just a few minutes to warm tuna. Combine with cooked quinoa and serve! Makes 2 servings
