Receta Turkey Enchilada

Ingredientes
- 15 lbs turkey meat
- 4 jars adobo chipotle sauce
- 1 gal diced onions
- 10 lbs diced peppers/mixed (reserve 3 lbs)
- 10 lbs cheese, shredded
- 12 fresh cilanto, minced
- 1 cup chopped garlic
- 1 cup oil
- 1 can green chilies
- 200 each tortillas
Direcciones
- Saute diced onions in oil until translucent. Add green chilies and garlic and cook for 5 minutes. Hold.
- Saute turkey meat with 1 quart of adobo sauce until cooked through.
- Quick saute 7 lbs of the chopped peppers.
- Combine the turkey mixture with the onion, chilies, and garlic mix, the cooked peppers, and cilantro.
- In an open tortilla, plcce a layer of cheese and about 5 ounces of above mix.
- Make certain cheese and mix covers tortilla.
- Rol up the tortilla and place seam side down in a pan with some adobo sauce on the bottom.
- Pack them tight; drizzle with additional sauce, sprinkle some diced peppers and cheese on top and bake to heat through.
- The mix can be prepped one day in advance. Assembly must take place day of service.
