Receta Uncooked Relish

Ingredientes
- 4 quarts. ripe skinned tomatoes, minced coarsely with knife
- 4 lg. onions, minced med. fine
- 1/2 c. salt
- 5 green pepper
- 1 bunch of celery
- 2 c. sugar
- 1 tbsp. mustard seed
- 1 teaspoon celery seed
- 1 pt. vinegar
Direcciones
- Chop tomatoes coarsely and add in onions (minced medium fine) and add in 1/2 c. salt. Mix thoroughly and let stand overnight. Drain well. Throw away liquid. Chop peppers and celery medium well with knife. Squeeze peppers to remove some juice. Add in to the tomatoes and onions. Mix sugar, mustard seed, celery seed and vinegar and add in to the tomato mix. Set for 2 hrs so flavors blend. Stir often to blend. Put in sterilized jars. Must be kept in refrigerator. Keeps for months.
