.%20%20Fear%20of%20death%20is%20what%20keeps%20most%20of%20us%20from%20bungee%20jumping.%20%20And%20fear%20of%20social%20embarrassment%20is%20what%20stops%20millions%20of%20people%20from%20singing%20or%20speaking%20in%20public;%20from%20wearing%20skimpy%20swimming%20costumes;%20or%20from%20halting%20attempts%20at%20a%20foreign%20language.%3C/p%3E%3Cp%3EIn%20the%20same%20vein,%20it%20is%20also%20what%20stops%20us%20from%20ordering%20unfamiliar%20items%20on%20a%20restaurant%20menu,%20Steak%20and%20chips%20%E2%80%93%20we%20all%20know%20what%20that%20is.%20%20But%20what%20is%20a%20tian%20of%20prawns?%20%20And%20is%20wagyu%20a%20cut%20of%20beef,%20a%20style%20of%20cooking%20or%20a%20type%20of%20meat?%20%20And%20while%20pear%20tart%20sounds%20homely%20and%20comforting,%20a%20galette%20of%20pears%20sounds%20terrifyingly%20sophisticated%20and%20unfamiliar.%20%20What%20if%20you%20order%20something%20that%20turns%20out%20to%20be%20repulsive%20-%20writhing%20eels%20of%20deep-fried%20insects??%20And%20then%20there%20are%20the%20words%20that%20are%20opaque%20in%20meaning%20and%20difficult%20to%20pronounce:%20think%20quesadillas,%20millefeuille,%20iles%20flottantes%20%E2%80%93%20or%20shiitake%20mushrooms.%3C/p%3E%3Cp%3EShiitake%20is%20one%20of%20those%20words%20that%20looks%20rude%20to%20the%20uninitiated%20but%20isn%E2%80%99t%20%E2%80%93%20rather%20like%20cockpit,%20in%20fact%20;)%20%20A%20friend%20who%20was%20idly%20examining%20the%20contents%20of%20my%20grocery%20cupboard%20while%20I%20cooked%20once%20came%20across%20a%20packet%20of%20dried%20shiitake%20mushrooms.%20%20%E2%80%9CWhy%20on%20earth%20would%20anybody%20want%20to%20eat%20something%20called%20%E2%80%9Cshit%20ache%E2%80%9D?%20she%20marvelled.%20%20But%20of%20course,%20it%E2%80%99s%20only%20the%20prism%20of%20English%20pronounciation,%20and%20its%20confounding%20habit%20of%20making%20the%20final%20e%20in%20a%20word%20silent,%20that%20give%20shiitake%20mushrooms%20a%20scatological%20makeover.%20%20A%20more%20correct%20version%20would%20be%20she-tar-keh%20%E2%80%93%20and%20the%20sooner%20you%20learn%20to%20say%20the%20word%20correctly%20and%20lose%20your%20fear%20of%20ordering%20them,%20the%20better%20because%20they%20are%20some%20of%20the%20most%20richly%20flavoured%20and%20delicious%20mushrooms%20you%20will%20find.%20%20Shiitake%20(or%20lentinus%20edodes)%20are%20mushrooms%20of%20Asian%20origin%20where%20they%20have%20been%20growing%20in%20China%20and%20Japan%20since%20prehistoric%20times.%20%20They%20are%20often%20found%20growing%20on%20fallen%20broadleaf%20trees,%20but%20can%20also%20%20be%20commercially%20cultivated.%20%20%20The%20lentinant%20contained%20in%20the%20mushroom%20is%20the%20active%20ingredient%20credited%20with%20its%20disease%20fighting%20properties%20such%20as%20controlling%20cholesterol%20and%20boosting%20the%20immune%20system,%20and%20is%20being%20researched%20as%20a%20cancer%20treatment.%20%20More%20importantly%20to%20me,%20they%20are%20packed%20with%20umami%20and%20strongly%20reminiscent%20of%20truffles,%20but%20with%20a%20far%20lower%20price%20tag.%20%20If%20you%20are%20using%20dried%20shiitake,%20don%E2%80%99t%20discard%20the%20soaking%20water%20as%20it%20is%20as%20flavourful%20as%20the%20mushrooms%20themselves%20and%20makes%20a%20fantastic%20stock%20to%20add%20to%20soups%20and%20gravies.%3C/p%3E%3Cp%3EThis%20dish%20is%20the%20result%20of%20sending%20my%20darling%20husband%20grocery%20shopping%20rather%20than%20going%20myself.%20%20To%20be%20fair,%20he%20does%20attempt%20to%20buy%20what%20I%20have%20written%20on%20the%20list,%20but%20he%20is%20also%20prone%20to%20taking%20advantage%20of%20special%20offers%20%E2%80%93%20and%20what%20was%20on%20offer%20that%20day%20was%20a%20pair%20of%20venison%20steaks.%20%20Although%20I%20would%20normally%20choose%20to%20pair%20venison%20with%20a%20sweet,%20fruity%20sauce,%20I%20had%20a%20packet%20of%20dried%20shiitake%20mushrooms%20on%20hand%20and%20was%20so%20intrigued%20by%20the%20recipe%20I%20found%20on%20the%20Good%20Food%20Channel%20website,%20that%20I%20ditched%20the%20fruit,%20reasoning%20that%20the%20caramelised%20balsamic%20would%20provide%20the%20necessary%20sweetness.%20%20The%20end%20result%20is%20slightly%20exotic%20but%20unfussy%20and%20packed%20with%20deep%20umami%20flavour.%20%20Serve%20it%20with%20a%20robust,%20fruity%20red%20wine%20such%20as%20an%20Argentine%20Malbec.%3C/p%3E%3Cp%3E%EF%BB%BFVENISON%20STEAKS%20WITH%20A%20RED%20WINE,%20BALSAMIC%20&%20SHIITAKE%20MUSHROOM%20SAUCE%20(serves%202)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3ESoak%20the%20mushrooms%20in%20hot%20water%20for%2015%20minutes.%20%20Drain%20but%20reserve%20the%20soaking%20liquid%20to%20use%20in%20stocks.%3C/p%3E%3Cp%3ERub%20the%20olive%20oil%20into%20the%20venison.%20%20Heat%20a%20heavy%20(preferably%20cast-iron)%20frying%20pan,%20add%20the%20venison%20when%20hot%20and%20fry%20for%201%20minute%20on%20each%20side.%3C/p%3E%3Cp%3EAdd%2015g%20of%20butter,%20the%20drained%20mushroots,%20shallots%20and%20garlic.%20Cook%20for%205%20minutes,%20stirring%20often.%20%20Add%20the%20red%20wine%20and%20balsamic%20vinegar%20and%20continue%20to%20cook,%20stirring%20to%20deglaze%20the%20pan.%3C/p%3E%3Cp%3EOnce%20the%20venison%20is%20cooked%20to%20your%20taste,%20%20remove%20it%20from%20the%20pan%20and%20keep%20warm.%20Add%20the%20remaining%20butter%20to%20the%20mushroom%20sauce%20and%20cook%20briskly%20until%20reduced%20by%20half.%3C/p%3E%3Cp%3EServe%20the%20sauce%20over%20the%20steak%20with%20a%20baked%20potato%20on%20the%20side.%3C/p%3E){kind=link}
