Receta "Welcome Home" Vegetable Barley Soup

Ingredientes
- 3 lbs. beef short ribs
- 2 cans tomatoes, undrained (1 pound 12 ounce. size)
- 2 teaspoon salt
- 2 bay leaves
- Vegetables as desired - 3 c. (green beans, corn, Lima beans, e.g.)
- 1 c. minced onion
- 1/2 c. barley (raw)
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1 clove garlic, crushed
Direcciones
- Put ribs, tomatoes, salt, bay leaves and 1 qt water into large kettle. Cover and bring to boil. Reduce heat and simmer 2 hrs, covered.
- Add in vegetables, onion, barley, herbs and garlic. Simmer, covered, one hour or possibly till vegetables are tender. Remove ribs, ????? meat and return to soup. Chill several hrs. Before heating, skim fat from surface. Heat slowly. Makes 3 qts.
