Receta Whole Wheat Banana Chocolate Mini Muffins
These are my kids' favorite! Made with whole wheat flour, sucanat, and only egg whites, they are a healthier alternative to "regular" muffins, but just as good.
Great for a sweet treat in the lunch box!
Ingredientes
- 1 2/3 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 cup unsweetened cocoa
- 1/4 teaspoon sea salt
- 3 egg whites
- 1/4 cup sucanat
- 1/4 cup canola oil
- 1/4 cup milk (soy, cow, almond...)
- 2 teaspoons vanilla
- 2 medium bananas, very ripe, mashed
- 1/4 cup mini chocolate chips
Direcciones
- Preheat oven to 375°F. Spray mini muffin pan with olive oil cooking spray.
- Combine dry ingredients (flour, baking powder, baking soda, cinnamon, cocoa, and salt). Stir until well mixed.
- In separate bowl, combine egg whites and sucanat until sucanat is dissolved. Add oil, milk, vanilla and bananas. Stir to combine.
- Add wet ingredients to dry ingredients and stir until just combined.
- Mix in chocolate chips.
- Fill muffin cups 2/3 full and bake for 10 minutes. Remove from pan and cool on cooling rack.
