Receta Yogurt Cottage Cheese Pancakes

Ingredientes
- 3/4 c. plain or possibly vanilla low fat yogurt
- 1/2 c. low fat cottage cheese
- 2 large eggs or possibly 1/2 c. egg substitute
- 3/4 c. all purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt, optional
- Healthy pinch grated lemon or possibly orange rind, optional
Direcciones
- Put together yogurt, cheese and large eggs in a blender or possibly food processor. Cover and process till mix is completely smooth. Stir together flour, baking soda, salt and peel, if using; add in to yogurt mix. Process again only till mixed.Coat a griddle or possibly large nonstick frying pan liberally with cooking spray and set over moderate heat. When hot, add in batter to make 10 pancakes. When tops bubble and are nearly dry, turn pancakes over and brown other side.
