This is a good master recipe that you can modify to meet your taste and dietary needs. My kids love it.

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl.
  4. Add sifted ingredients to the creamed mixture, and beat well.
  5. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  6. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.
  7. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

    Oh heavens Aspen. I just picked zucchini and blueberries last night and in a random search, found your recipe. I made it this morning and we're all hooked on it. The tart blueberries fit perfectly with the sweet bread. Thank you so much for posting the recipe.

      I like blueberry. I have tried making blueberry cupcake or muffins... this looks nice with a twist.

        Hi.. this recipe looks "so great" ! I love the healthier substitutes you have put on as an alternative! Zucchini Bread and Blueberries; Mine and my husband's two favorites things combined! And for sure I'll add the walnuts.. they are so good for you and more and more magazines are touting their healthiness in our diets! Thank-you so much!!!!!
